Blackened Tilapia Recipe

2 tbsp. salt
2 tbsp. smoked paprika
1 tbsp. garlic powder
1 tbsp. onion powder
2 tsp. red pepper & cayenne
2 tbsp. ground black pepper
2 tsp. ground thyme
2 tsp. oregano
2 tsp. ground cumin
2 tsp. seafood seasoning
Melted Butter (about a half a stick)

Mix seasonings together and generously sprinkle onto the fillet, rubbing mixture into the meat.
Dip the seasoned fillet into the melted butter.
Using a very hot skillet, cook approximately 2 minutes per side.
*I've used tilapia, catfish, haddock, grouper, snapper and cod/ I would think this would work well with most any fish.
*I also substituted smoked paprika for regular paprika because I prefer the smokier slightly sweet taste.

Penne Pasta with Garlic Cream Sauce

8 oz penne pasta
4 cloves garlic, chopped
1 cup light cream
1/4 cup grated asiago cheese
1/4 tsp red pepper flakes
2 tbsp dry white wine

While the pasta is cooking, heat about 1 tbsp olive oil in a large pan. Add red pepper flakes and garlic, saute till the garlic is clear.
Add white wine and stir
Add cream and let simmer for about 5 minutes until it is lightly bubbling.
Stir in cheese, stir until slightly thickened. Now toss with penne pasta that has been cooke al dente.

*You can experiment with different cheeses.
