Low Carb Roasted Asparagus Recipe Great for Easter Brunch

Dry heat (in the oven or on the grill) is my favorite way to cook many veggies, especially asparagus. 


Roast Asparagus

Ingredients:
Asparagus
Olive oil (about a teaspoon for 6 spears)
Salt, pepper, and herbs of choice
A few drops of lemon juice

Grilling Instructions: Follow directions below, except heat the grill instead of the oven, don't use a baking sheet, and turn once during the cooking.
Preheat oven to 425 F.
Prepare the asparagus, either just by snapping off the ends, or trimming the very end and peeling tough part with vegetable peeler.

Put on cookie sheet or baking pan.

Drizzle the oil over the asparagus, followed by the salt, pepper, herbs, and lemon. 
I use my hands and just smear the ingredients all over the asparagus. 

Bake for 5-10 minutes, until tender.
Hint: 
1) Add shaved parmesan after grilling/roasting..this adds another depth of flavor.
2) Sprinkle with sesame seeds before roasting/grilling for a more Asian flavor.

One medium asparagus spear (5-7 inches long) has .3 grams effective carbohydrate and .3 grams fiber.
